Filipino Beef Tapa with Garlic Rice and Egg (Tapsilog)

Tapsilog Say it: tap-SEE-log

Filipino Beef Tapa with Garlic Rice and Egg (Tapsilog), a dish from Philippines

Tapsilog is the Philippines’ beloved breakfast trio: tender beef tapa, garlic fried rice (sinangag), and a fried egg (itlog), its name a mash-up of the three. Sold at home tables, carinderias, and all-day diners nationwide, it balances salty-sweet cured beef, pungent garlic rice, and rich egg. The beef is marinated in soy, vinegar, calamansi, sugar, and garlic, then fried until glossy and slightly crisp at the edges. It is hearty, tangy, and deeply savory—a morning meal that eats well at any hour.

Method

  1. Freeze the beef for 20 minutes to firm it, then slice it very thinly across the grain. In a bowl, whisk the soy sauce, vinegar, calamansi juice, sugar, minced garlic, and black pepper until the sugar dissolves.

  2. Add the beef slices and toss to coat. Cover and marinate at room temperature for 30 minutes, or refrigerate overnight for a deeper cure.

  3. For the garlic rice, heat 3 tbsp (45 ml) oil in a wok or large skillet over medium-low heat. Add the sliced garlic and fry, stirring often, until pale golden and crisp, 2–3 minutes; lift out half with a slotted spoon and set aside.

  4. Raise the heat to high, add the chilled rice and salt, and toss until every grain is hot and coated with garlic oil, 4–5 minutes. Scrape any browned bits and keep warm; stir in the reserved fried garlic just before serving.

  5. Drain the beef, discarding the marinade, and pat the slices dry. Heat 2 tbsp (30 ml) oil in a large skillet over medium-high heat and fry the beef in a single layer, in batches if needed, until browned and crisp at the edges, about 2–3 minutes per side.

  6. Transfer the tapa to a warm plate. Wipe the skillet if needed, add the remaining 2 tbsp (30 ml) oil, and fry the eggs sunny-side up until the whites are set and the edges are crisp, 2–3 minutes. Season with a pinch of salt and pepper.

  7. Divide the garlic rice among four plates. Top with beef tapa and a fried egg, then add tomato slices, scatter with scallions, and serve with calamansi or lime wedges.

Regional variants

For other silog plates, swap the beef for pork tocino (tocilog) or garlicky longganisa (longsilog). A splash of vinegar with crushed garlic makes a sharp dipping sauce for the tapa.

Cook's notes

  • Day-old rice is key: freshly cooked rice steams and clumps. Spread warm rice on a tray and chill uncovered for 20 minutes if you are in a hurry.
  • Do not crowd the beef; a hot pan and a single layer give the caramelized edges that make tapa distinctive.
  • Marinate the beef overnight for a firmer, more intensely flavored cure; drain well before frying so it browns rather than stews.

Serve with

Serve with tomato slices, calamansi wedges, and a small bowl of vinegar with crushed garlic.

Make ahead and storage

Marinate the beef up to 24 hours ahead and refrigerate; cook garlic rice a day ahead. Reheat rice and tapa gently, and fry the eggs fresh.
