About Passport Plate

Passport Plate is a small independent publisher of world recipes. We make the Passport Plate cookbook series and this website.

Who we are

We are an editorial team, not a celebrity chef. Recipes on this site are credited to "the Passport Plate editors" because several people research, write and check each one. We do not invent personas, ratings or reviews.

How we write a recipe

  1. We start from the dish as it is cooked in its home country, using recipes from cooks and food writers from that country.
  2. We write one clear version for a home kitchen outside that country, with US and metric measures and substitutes for hard-to-find ingredients.
  3. An editor checks quantities, times, temperatures, diet labels and allergens against the ingredient list.
  4. We name the dish in its own language and add a pronunciation guide, so you can order it with confidence when you travel.

How we choose the best-loved dishes

Each country's ranking is an editorial judgement. We weigh how widely a dish is cooked at home, how often it appears at celebrations and how central it is to the national table. It is not based on reader votes.

Corrections

If something in a recipe is wrong or unclear, please tell us. We correct recipes and show the update date on the page.
