Pistachio Gelato (Gelato al Pistacchio)

Gelato al pistacchio Say it: jeh-LAH-toh ahl pee-STAHK-kyoh

Pistachio Gelato (Gelato al Pistacchio), a dish from Italy

Gelato al pistacchio is Italy's intensely nutty pistachio gelato, closely associated with Sicily and the prized pistachios grown around Bronte. Unlike ordinary pistachio ice cream, it is dense, smooth and only moderately sweet, letting roasted pistachio flavor lead. Italians enjoy it as an afternoon or evening treat, served in a cup or cone. Its natural pale green color comes from the nuts themselves rather than bright dyes, and the creamy, almost fudgy texture makes a little scoop deeply satisfying.

Method

  1. If using whole pistachios, place them in a blender with 1/2 cup (120 ml) of the milk and blend on high until completely smooth, scraping down as needed. Set aside.

  2. In a medium saucepan, combine the remaining milk, heavy cream, sugar, and salt. Warm over medium heat, stirring, until steaming and the sugar is fully dissolved, about 5 minutes; do not boil.

  3. Remove from heat and whisk in the pistachio paste (or the blended pistachio-milk mixture) until fully incorporated and the base is pale green and smooth.

  4. Pour through a fine-mesh strainer into a bowl, pressing gently; this removes any gritty nut bits for a silkier texture. Let cool to room temperature.

  5. Cover and refrigerate until very cold, at least 2 hours or overnight.

  6. Churn in an ice cream maker according to the manufacturer's instructions, until the gelato is thick, creamy, and the consistency of soft serve, about 25–35 minutes.

  7. Scrape into a chilled loaf pan or freezer-safe container, press a piece of parchment paper directly on the surface, and freeze until firm enough to scoop, at least 2 hours.

  8. Let stand at room temperature for 5–10 minutes before scooping.

Regional variant: Bronte Pistachio Gelato (Gelato al Pistacchio di Bronte)

Use only whole milk and omit the heavy cream; increase the pistachio paste to 3/4 cup (180 g). The result is leaner, more intensely nutty, and slightly icier, as is traditional around Bronte, Sicily.

Cook's notes

  • Chill the gelato base thoroughly; a warm base churns poorly and forms ice crystals.
  • Use unsalted, raw or lightly roasted pistachios; avoid salted roasted nuts or the gelato may be too salty.
  • For the deepest flavor, toast shelled pistachios in a dry pan over medium heat until fragrant, about 3 minutes, then cool before blending.

Serve with

Serve alone in a chilled cup or cone; a few chopped pistachios or a small crisp wafer are the usual finishing touch.

Make ahead and storage

Keep in an airtight container in the freezer for up to 1 week; soften for 5–10 minutes before scooping.
