Potatoes in Huancaína Sauce (Papa a la Huancaína)

Papa a la huancaína Say it: PAH-pah ah lah wahn-kah-EE-nah

Potatoes in Huancaína Sauce (Papa a la Huancaína), a dish from Peru

Papa a la huancaína is a beloved Peruvian appetizer of boiled yellow potatoes draped in a thick, creamy, mildly spicy sauce tinted gold with ají amarillo. It comes from Huancayo in the Andean highlands and is now served across Peru, from home tables to neighborhood cevicherías. The sauce balances fresh white cheese, evaporated milk, crackers, garlic and oil, giving a silky texture and gentle heat. Cool potatoes, crisp lettuce, hard-boiled egg and black olives make each plate bright, satisfying and unmistakably Peruvian.

For the huancaína sauce

Method

  1. Put the potatoes in a large pot, cover with cold water by 1 inch (2.5 cm), and add the 1 tbsp salt. Bring to a boil, then lower the heat and simmer for 20–25 minutes, until a knife slides in with no resistance. Drain and let cool until easy to handle.

  2. While the potatoes cook, put the eggs in a small saucepan, cover with cold water, and bring to a boil. Boil for 9 minutes, then transfer to ice water, peel, and cut in half.

  3. Soak the crackers in the evaporated milk in a small bowl for 5 minutes, until softened and mostly broken down.

  4. In a blender, combine the ají amarillo paste, queso fresco, garlic, soaked crackers with the milk, 1/4 tsp salt, and pepper. Blend until smooth, then with the motor running drizzle in the vegetable oil until the sauce is thick and glossy.

  5. Add cold water 1 tbsp at a time and blend until the sauce is thick but pourable, about the consistency of mayonnaise; taste and adjust salt. It should be bright orange-yellow and gently spicy.

  6. Peel the cooled potatoes and cut them into 1/2-inch (1.25 cm) slices, or halve them if small. Arrange a lettuce leaf on each of 4 plates and fan the potatoes over the lettuce.

  7. Spoon the huancaína sauce generously over the potatoes, covering them but letting the edges show. Garnish each plate with hard-boiled egg halves and 3 black olives.

  8. Serve at room temperature or lightly chilled, with extra sauce on the side if you like.

Regional variants

Some cooks blend a little rocoto or ají limo into the sauce for extra heat, or use whole milk instead of evaporated milk for a lighter sauce. In Lima, the dish is often served with quartered eggs and Botija olives.

Cook's notes

  • For the smoothest sauce, blend the solids first and add the oil slowly; a high-speed blender or food processor works best.
  • If using feta, rinse it well and start with less salt, since it is saltier than queso fresco.
  • Cook the potatoes just until tender; overcooked slices break apart when dressed.

Serve with

Serve as a starter, with chicha morada or a cold beer.

Make ahead and storage

The sauce keeps refrigerated for up to 2 days; press plastic wrap onto the surface. Boil potatoes and eggs up to 1 day ahead and assemble just before serving.
