Cretan Fire-Roasted Lamb (Antikristo)

Cretan Fire-Roasted Lamb (Antikristo), a dish from Greece

Antikristo is a rustic Cretan way of roasting lamb or goat over an open fire. The name means 'facing' because the meat faces the fire. Shepherds season the meat simply with coarse salt and oregano, letting smoke and slow heat do the work. The result is crisp, smoky edges and juicy, tender meat. It is a celebratory dish for Easter and village feasts, cooked outdoors over wood and carved to share.

Method

  1. Build a fire with hardwood charcoal or oak wood in a charcoal grill or fire pit. Let it burn until the coals are glowing and covered with white ash, about 30-40 minutes. You want steady, medium heat, not high flames.

  2. Pat the leg dry with paper towels. Using a sharp knife, score the fat cap in a crosshatch without cutting into the meat. Rub the salt all over, pressing it into the cuts.

  3. If using a rotisserie, run the spit lengthwise through the leg, secure the forks, and position it about 12-14 inches (30-35 cm) above the coals. Start the motor or turn by hand every 5-10 minutes.

  4. Traditional antikristo method. cut the leg into 4-6 large chunks and thread each onto a long wooden skewer (soak wood in water 30 minutes first). Drive the skewers into the ground around the fire at an angle so the meat leans away from the fire, facing the heat. Turn every 15-20 minutes.

  5. Cook slowly, basting occasionally with the rendered fat that drips into a pan placed under the meat, for 2.5-3 hours total. The exterior should be deep brown and crisp in spots.

  6. Check temperature in the thickest part away from bone: 145°F (63°C) for medium, 160°F (71°C) for well done. Goat can cook slightly longer if you prefer more tender, to 165°F (74°C).

  7. Transfer the meat to a cutting board, tent with foil, and rest for 15 minutes before carving.

  8. Slice against the grain, sprinkle with oregano and a little extra salt, and serve with lemon wedges.

Regional variants

Some cooks add a rub of garlic and lemon juice before roasting, but purists keep it to salt and oregano.

Cook's notes

  • Use a meat thermometer; the distance from coals matters more than exact temperature.
  • If the fire flares, raise the meat or wait for flames to die down before continuing.
  • Soak wooden skewers at least 30 minutes to prevent them from burning.

Serve with

Serve with Cretan dakos salad, fried potatoes or pilaf, and a glass of cold tsikoudia or red wine.

Make ahead and storage

Best eaten immediately; leftovers can be refrigerated for 2 days and gently reheated or used in sandwiches.
