Toruń Gingerbread Cookies (Pierniki Toruńskie)
Pierniki toruńskie Say it: pyeh-RNEE-kee toh-ROON-skyeh
Toruń gingerbread (pierniki toruńskie) is a dark, honey-rich spiced cookie from the city of Toruń in northern Poland, where it has been a proud local craft for centuries. The dough is scented with ginger, cinnamon, cloves and cocoa, then rested so the flavors deepen before baking. The cookies come out with crisp edges and a tender, chewy center, sweetened mostly with honey. They are eaten at Christmas, given as gifts, and enjoyed with tea or coffee.

Method
In a medium saucepan over low heat, combine the honey, brown sugar, and butter. Stir until melted and smooth, about 3-4 minutes; do not let it boil. Remove from the heat and cool until lukewarm, about 110°F (43°C), so it will not cook the eggs.
In a large bowl, whisk the flour, cocoa, baking soda, ginger, cinnamon, cloves, nutmeg, cardamom, and salt until evenly combined.
Whisk the eggs into the lukewarm honey mixture. Pour into the dry ingredients and stir with a wooden spoon, then knead lightly in the bowl until a soft, sticky dough forms. If it is too sticky to handle, add flour 1 tbsp at a time, but keep the dough soft.
Shape the dough into a disk, wrap tightly, and refrigerate for at least 2 hours or up to 2 weeks; the flavor deepens as it rests.
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment. On a lightly floured surface, roll the dough 1/4 inch (6 mm) thick. Cut shapes with a 2 1/2-inch (6 cm) cutter, re-rolling scraps, and place 1 inch (2.5 cm) apart on the sheets.
Bake one sheet at a time for 8-10 minutes, until set and the edges are slightly darker and firm. The centers should still feel just soft. Let cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
For the optional glaze, whisk the powdered sugar with 1 tbsp water or milk, adding more drop by drop until thick but pourable. Spread or pipe over cooled cookies and let set for 30 minutes.
Regional variant: Filled Toruń Gingerbread (Pierniki Nadziewane)
Roll the dough into thin rounds, place a teaspoon of thick plum jam (powidła) on half of them, top with the remaining rounds, and pinch the edges to seal. Bake as directed, adding 1-2 minutes if needed, until the edges are set and lightly browned. Cool before dusting with powdered sugar.
Cook's notes
- Rest the dough at least 2 hours, but overnight or up to 2 weeks gives a deeper, more traditional Toruń flavor.
- Bake just until the edges are set; the cookies firm as they cool, and overbaking makes them hard.
- Chill cut-out cookies for 10 minutes before baking to help them hold crisp shapes.
Serve with
Tea, coffee, or warm milk; often given as Christmas gifts.
Make ahead and storage
Store cooled cookies in an airtight tin for up to 2 weeks; the spice flavor mellows and deepens after a day. The dough can be refrigerated for up to 2 weeks or frozen for 2 months.
