Village-Style Meat Stew (Selsko Meso)

Селско месо Selsko mesoSay it: SEL-sko MEH-so

Village-Style Meat Stew (Selsko Meso), a dish from North Macedonia

Selsko meso is the kind of dish that anchors a table: chunks of pork turn tender in a savory onion-and-pepper base, mushrooms add depth, and sour cream brings a gentle tang. It is a Macedonian village-style stew that rewards a slow start and a final blast of oven heat, which gives the top a golden edge. Make it for a relaxed Sunday lunch or a cold-weather gathering; it serves six and can be prepared through the creamy stage up to two days before baking.

Method

  1. Mix the pork cubes with mustard, 1 1/2 tsp salt and black pepper in a bowl. Leave them for 15 minutes at room temperature, or cover and refrigerate for as long as 1 hour.

  2. Choose a broad, heavy pot or Dutch oven and set it over medium heat; add no extra fat. Cook the pork, turning it now and then, until the juices have cooked away and the pieces start to color, 15–20 minutes. Then add the sunflower oil or butter and keep cooking until the meat is well browned all over, 5–8 minutes longer.

  3. Stir in the onion and red peppers and cook until they soften, 8–10 minutes. Add the garlic and cook for 1 minute more.

  4. Add the wine or water and the hot water or stock, stirring to loosen any browned bits from the pot. Bring to a gentle simmer, cover, and cook on low until the pork is very tender, 1 1/2–2 hours; stir from time to time and add a splash of hot water if the pot looks dry.

  5. Fold in the mushrooms, cover again, and simmer until just tender, 15–20 minutes. Season with more salt and pepper to taste; the sauce should be rich and spoonable, not thin and soupy.

  6. Take the pot off the heat. Add the sour cream a spoonful at a time, stirring until it is fully incorporated.

  7. Set the oven to 400°F (200°C). Move the stew to a baking dish or clay pot, or use an oven-safe pot. Bake until the surface starts to turn golden and the sauce bubbles around the edges, 15–20 minutes.

  8. Allow the stew to stand for 5 minutes, then scatter with parsley and serve.

Regional variant: Pork and veal clay-pot version (selsko meso so teleško meso)

Swap half of the pork for the same weight of veal shoulder. In a clay pot, layer the meat with the onions, peppers and mushrooms; pour in the wine and a little water. Cover and bake at 350°F (175°C) for about 2 hours, stirring once or twice. Add the sour cream during the last 15 minutes of baking.

Cook's notes

  • Should the pork give off a lot of liquid while it cooks, spoon some out before the browning stage; the meat will color more deeply and build more flavor.
  • Let the sour cream come to room temperature and stir it in only after the pot is off the heat, so the sauce stays smooth rather than splitting.
  • For a deeper mushroom taste, use a small handful of soaked dried porcini, adding them and their soaking liquid in place of part of the water or stock.

Serve with

Offer crusty white bread or warm pita alongside, plus rice or mashed potatoes and a salad of tomato and onion. In North Macedonia, a glass of Vranec red wine is a natural match.

Make ahead and storage

Prepare the stew through step 6 up to 2 days in advance. Cool it, cover and refrigerate. Reheat gently with stirring, then bake it just before serving.
