Kosovan Stuffed Cabbage Rolls (Sarma)
Sarma Say it: SAR-mah
Sarma is a beloved Balkan dish of cabbage or vine leaves rolled around minced meat and rice, then simmered slowly until tender. In Kosovo it is a winter and holiday staple, often made with tangy fermented cabbage leaves and a little smoked meat for depth. The rolls are savory, juicy, and gently sour, with soft leaves and a comforting rice-and-meat filling. It is the kind of dish meant for a gathering, served straight from the pot with its rich cooking juices.

Method
If using a whole sour cabbage, cut out the core and carefully separate 20–24 large leaves, trimming the thick central ribs so they roll flat. Rinse briefly only if very salty; if using brined vine leaves, rinse and blanch for 1 minute.
Warm 1 tbsp (15 ml) of the oil in a skillet over medium heat. Cook the onion until soft and translucent, about 6 minutes, then add the garlic and cook for 30 seconds; scrape into a bowl and cool slightly.
Add the minced meat, rinsed rice, paprika, tomato paste, 1 tsp (5 g) of the salt, and half the pepper to the onion. Mix gently until just combined; do not compact the mixture.
Lay a leaf vein side up, put 2 tbsp (about 30 g) filling near the stem, fold in the sides, and roll firmly but not tightly. Repeat with the remaining leaves and filling.
Line a heavy pot with 2–3 reserved small leaves and scatter the smoked pork over them. Arrange the rolls seam side down in snug layers, drizzle with the remaining 1 tbsp (15 ml) oil, add the bay leaf, remaining 1/2 tsp (3 g) salt, and remaining pepper, then pour in water to just cover.
Place an inverted heatproof plate on top to keep the rolls submerged. Bring to a gentle simmer, cover, and cook on low for 2 to 2 1/2 hours, until the rice is tender and the leaves are silky; add hot water if the pot dries out.
Remove from the heat and let rest for 20 minutes before serving, spooning some cooking juices over each roll.
Regional variant: Vine-Leaf Sarma (Sarma me gjethe rrushi)
Use 24 brined grape vine leaves instead of sour cabbage, rinsing them well if very salty. Put only 1 tbsp (about 15 g) filling in each leaf, roll tightly, and simmer for 1 1/2 to 2 hours; the leaves should be tender and the rice cooked through.
Cook's notes
- Do not overfill the leaves; the rice swells as it cooks and tight rolls can burst.
- Taste the cooking liquid before adding salt, because fermented cabbage and smoked meat can be quite salty.
- Sarma tastes even better after a day in the refrigerator, when the flavors have settled.
Serve with
Cool yogurt or sour cream, fresh bread, and a simple cabbage or tomato salad.
Make ahead and storage
Cool, refrigerate for up to 3 days, and reheat gently with a splash of water; the rolls also freeze well for up to 2 months.
