Serbian Baked Beans (Prebranac)

Пребранац PrebranacSay it: pre-BRAH-nahts

Serbian Baked Beans (Prebranac), a dish from Serbia

At Serbian family tables, slava celebrations and Orthodox fasting meals, prebranac often appears as a meatless and dairy-free main. Its flavor is sweet and savory: onions are cooked down until deep gold, then baked with white beans, paprika and oil until the top browns and crusts while the beans stay soft underneath. The name refers to those onions being prebraniti—fried until deeply golden—before they meet the beans. A practical note: it uses pantry staples, feeds six, and reheats well, so it is a useful dish to make ahead.

Method

  1. Rinse the beans, put them in a large bowl, and add cold water until it sits at least 2 inches (5 cm) above them. Let them soak overnight or for a minimum of 8 hours, then drain well.

  2. Put the drained beans in a large pot and cover with fresh cold water by 2 inches (5 cm). Salt the water lightly, bring to a boil, and remove any foam that rises. Lower the heat to a gentle simmer and cook for 45–60 minutes, until the beans are tender but not falling apart. Drain, saving about 1/2 cup (120 ml) of the cooking liquid.

  3. While the beans simmer, warm 1/2 cup (120 ml) of the oil in a wide skillet over medium heat. Add the onions with a pinch of salt and fry, stirring frequently, for around 20 minutes, until they collapse and turn deep golden. Take the pan off the heat and stir in the garlic, paprika, black pepper and the remaining 1 1/2 tsp salt.

  4. Set the oven to 400°F (200°C). Grease a 9x13-inch (23x33 cm) baking dish or clay casserole with a little of the remaining oil. Build the dish in three layers: one-third of the beans, then one-third of the onions, repeating twice and finishing with beans. Push the bay leaf and the optional whole dried hot pepper into the top layer.

  5. Spread the rest of the oil over the surface as evenly as you can. If the mixture seems dry, add the reserved bean liquid around the inside edges of the dish instead of pouring it over the top, so the surface can form a crust.

  6. Bake for 40–50 minutes, until the top is browned, the sides are caramelized and bubbling, and a golden crust has formed. Rest for 10 minutes, then discard the bay leaf and hot pepper before serving.

Regional variant: Macedonian-style Tavče Gravče (тавче гравче)

For Macedonian-style tavče gravče, keep the boiled beans and fried onion base, but stir chopped roasted red peppers and a spoonful of tomato paste into the onions. Put everything into an earthenware dish, scatter sliced fresh tomato and chopped parsley on top, add a splash of bean-cooking liquid, and bake until the surface crusts. Some cooks include smoked paprika or a small fresh chili.

Cook's notes

  • Keep the initial simmer gentle; the beans need to stay intact because they will soften further and take on flavor during baking.
  • Do not rush the onions. Their deep golden color is what gives the dish its sweet, rounded flavor.
  • Like many bean dishes, it is often even better after a day in the fridge; reheat it covered with a little water.

Serve with

Crusty bread, sauerkraut or a cabbage salad, and pickled hot peppers.

Make ahead and storage

Store in the refrigerator for up to 3 days. Reheat in a low oven, adding a splash of water.
