Bulgarian Grilled Meat Rolls (Kebapche)
Кебапче KebapcheSay it: keh-BAHP-cheh
Order a plate of these in Bulgaria and they arrive hot off the charcoal, streaked with grill marks and smelling of cumin and smoke. Kebapcheta are casing-free rolls of minced pork and beef, hand-shaped into short cylinders and cooked fast over high heat, so the crust browns while the middle stays juicy. The seasoning is deliberately plain — salt, black pepper, cumin — and the only real technique is kneading the meat with ice-cold water until it turns tacky enough to hold its shape on the grate. They are a fixture of summer grilling and tavern tables all year, piled next to shopska salad, fries and lyutenitsa.

Method
Put the pork, beef, salt, cumin, black pepper and ice-cold water in a wide bowl. Work everything together by hand for 4-5 minutes, until the mass feels sticky and just slightly elastic — that tackiness is the only thing binding the rolls, since there is no casing.
Cover the bowl and chill for at least 2 hours, or overnight, so the seasoning settles in and the mixture stiffens.
Cut the cold mixture into 12 even pieces of about 3 oz (85 g) each. With wet hands, shape each one into a cylinder roughly 4 inches (10 cm) long and 3/4 inch (2 cm) thick, squeezing out any air pockets as you go. Set them on a tray and chill for 30 minutes to firm up.
Bring a charcoal or gas grill to high heat, or set a ridged grill pan over high heat, and oil the grate lightly.
Lay the rolls on the grill and turn them every 2 minutes until they are well browned all over and cooked through, 8-10 minutes in total; the center should register 160°F (71°C) on an instant-read thermometer. Leave them alone between turns rather than pressing down, which only squeezes out juice.
Move them to a platter, rest 2-3 minutes, and serve hot with shopska salad, fries and lyutenitsa.
Regional variant: Pork-only kebapcheta (свински кебапчета)
Swap the beef for the same weight of ground pork shoulder, then stir in 1 teaspoon chubritsa and a pinch of hot paprika. Roll them a little fatter, about 1 inch (2.5 cm) across, and keep them over medium-high heat for 2-3 minutes longer so the insides stay moist.
Cook's notes
- Choose pork shoulder that is at least 20% fat; a leaner mix gives dry, crumbly rolls.
- Work with the meat as cold as possible — if it warms up during kneading, the fat smears and the finished texture turns mealy.
- Judge the kneading by feel: the mixture should become slightly tacky. Shaping it before that point often means the rolls crack apart over the fire.
Serve with
Shopska salad, French fries, lyutenitsa, and a cold Bulgarian beer or ayran.
Make ahead and storage
The seasoned mixture keeps in the fridge overnight; shaped raw rolls freeze for up to 1 month and can go straight onto the grill, allowing 3-4 extra minutes.
Questions cooks ask
What is kebapche made of?
Kebapche is made from equal parts ground pork shoulder and ground beef chuck, seasoned with fine sea salt, ground cumin and coarsely ground black pepper, plus ice-cold water. There is no casing and no binder — the tackiness from kneading the meat holds the rolls together. Neutral oil is used only for brushing the grill.
How do you prepare kebapcheta?
Mix the pork, beef, salt, cumin, pepper and ice-cold water by hand for 4-5 minutes until tacky, then chill at least 2 hours. Shape into 12 cylinders about 4 inches (10 cm) long and 3/4 inch (2 cm) thick, chill 30 minutes, and grill over high heat, turning every 2 minutes, for 8-10 minutes total.
How long do you grill kebapche?
Grill the rolls over high heat, turning them every 2 minutes, for 8-10 minutes in total. They are done when well browned all over and the center registers 160°F (71°C) on an instant-read thermometer. Leave them alone between turns rather than pressing down, which only squeezes out juice.
Can you make kebapche ahead of time?
Yes. The seasoned meat mixture keeps in the fridge overnight, and shaped raw rolls freeze for up to 1 month. Frozen rolls can go straight onto the grill, allowing 3-4 extra minutes of cooking time.
What do you serve with kebapche?
Serve the rolls hot after resting 2-3 minutes, with shopska salad, French fries, lyutenitsa, and a cold Bulgarian beer or ayran.
