Brazilian Milk Caramel (Doce de Leite)

Doce de leite Say it: DOH-see jee LAY-chee

Brazilian Milk Caramel (Doce de Leite), a dish from Brazil

Doce de leite is Brazil’s beloved milk caramel, made by slowly cooking milk and sugar until it turns thick, glossy, and deep golden. It is eaten across the country as a dessert, spread on bread and toast, stirred into yogurt, or paired with cheese. The flavor is sweet and mellow with a gentle cooked-milk caramel note, and the texture ranges from spoonable to firm depending on how long it cooks. Making it at home rewards patience: constant stirring and low heat turn simple ingredients into a rich, spoonable sweet.

Method

  1. In a heavy-bottomed saucepan, whisk together the milk, sugar, baking soda, and salt until the sugar is mostly dissolved.

  2. Set the pan over medium heat and bring to a gentle boil, stirring often with a heatproof spatula so the sugar does not catch on the bottom.

  3. Reduce the heat to low and simmer uncovered, stirring frequently and scraping the bottom and corners of the pan, for 45–60 minutes, until the mixture is pale golden and reduced by about half.

  4. Continue cooking, stirring almost constantly, for 10–20 minutes more, until the caramel is deep golden brown, thick enough to coat the back of a spoon, and a line drawn through it on the spoon holds briefly.

  5. Remove from the heat and let stand for 5 minutes; it will thicken further as it cools.

  6. Spoon into a clean jar or serving bowl and cool completely before covering.

  7. Store in the refrigerator; serve at room temperature or gently warmed for a looser consistency.

Regional variant: Doce de leite de corte (firm sliceable milk caramel)

Cook the same mixture 15–25 minutes longer, until it is very thick and pulls away from the bottom of the pan in a mass. Pour into a parchment-lined 8-inch (20 cm) square pan, smooth the top, and cool completely. Cut into squares and wrap individually; the texture is firm enough to slice rather than spread.

Cook's notes

  • Use a heavy saucepan and a heatproof spatula; doce de leite scorches easily once it thickens.
  • Keep the heat low after the first boil—rapid boiling can make the milk catch and turn grainy.
  • If the caramel becomes too thick after chilling, warm it gently with a splash of milk.

Serve with

Pão francês, toast, or fresh white cheese such as queijo minas (or ricotta salata); strong coffee.

Make ahead and storage

Keeps in a sterilized jar in the refrigerator for up to 3 weeks; stir or warm gently before serving.
