Bosnian Pot Stew (Bosanski Lonac)

Bosanski lonac Say it: BOH-sahn-skee LOH-nahts

Bosnian Pot Stew (Bosanski Lonac), a dish from Bosnia and Herzegovina

Bosanski lonac is a layered beef and vegetable stew from Bosnia and Herzegovina, often made for family lunches and gatherings. It tastes deeply savory and rustic: the beef becomes fork-tender and the vegetables soften into a concentrated sauce with a warm paprika note. The practical hook is simple—use a covered clay pot or a heavy Dutch oven, layer everything, and let the oven do the work without stirring.

Method

  1. If you are using an unglazed clay pot, soak it in cold water for 30 minutes and drain it. Heat the oven to 300°F (150°C). Coat the bottom and sides of the clay pot or a heavy Dutch oven with 1 tablespoon of the oil.

  2. Rub the beef pieces with the salt and sweet paprika. Have all the vegetables prepared as listed.

  3. Build the stew in layers. put half the onions and cabbage in the pot, then half the beef, half the potatoes, half the carrots, half the bell peppers, and half the tomatoes. Add half the garlic, 1 bay leaf, and half the peppercorns. Repeat with the remaining onions, cabbage, beef, potatoes, carrots, bell peppers, tomatoes, garlic, bay leaf, and peppercorns, finishing with a vegetable layer.

  4. Drizzle the remaining 1 tablespoon oil and the water or stock around the inner edge of the pot, avoiding pouring it over the top. Put on a tight-fitting lid.

  5. Bake for 3 hours without lifting the lid. If at 2 hours the stew looks too dry, add up to 1/2 cup (120 ml) hot water carefully, then cover again.

  6. Check the meat with a fork. it should pull apart easily, and the vegetables should be very tender. If needed, bake for another 30 minutes.

  7. Take the pot from the oven and rest it covered for 10 minutes. Scatter the parsley over the top and serve from the pot.

Regional variant: Bosanski lonac sa suhim mesom (with dried meat)

Use 1 lb (450 g) dried or smoked beef (suho meso) in place of the fresh beef. Soak it overnight, then cut it into pieces. Cut the added salt to half and raise the water to 1 cup (240 ml). Layer the pot in the same order and bake for 3.5–4 hours, until the dried meat is tender.

Cook's notes

  • A traditional clay pot gives the most authentic character, though a heavy Dutch oven is a good substitute. Resist stirring during baking; the layers are meant to stay intact.
  • Use a full cabbage layer because it releases moisture and helps keep the beef from drying out.
  • Bring the pot to the table and spoon out portions in large sections rather than stirring roughly.

Serve with

Serve with crusty white bread, a quick salad of raw onion and vinegar, or a spoonful of sour cream or kajmak.

Make ahead and storage

Store in the refrigerator for up to 3 days; it reheats well and is often even better the next day.
